Brix (°Bx): measuring sugar concentration
What does the term mean?
The Brix scale refers to sucrose in water. In such a solution, 12 °Bx represents a 12% sucrose mass fraction. If a product contains other dissolved substances, a Brix display cannot simply be read as its pure sugar content.
Relevance to process measurement
Production may use Brix as an agreed indicator for a particular product. The measurement method and reference must match. A Brix value calculated from a physical signal does not automatically analyse individual sugars.
When is a Brix value meaningful?
An illustrative mixture of 12 kg sucrose and 88 kg water contains 12% sucrose by mass. In juice, syrup or other mixtures, additional ingredients also affect the measurement method. Such readings are often treated as apparent Brix.
Define the reference method and product family, and recheck the relationship after recipe changes. Brix and total solids may correlate in a particular case, but they do not generally describe the same result. A shared percentage alone does not make them interchangeable.
Check Brix values when changing products
In juice processing and evaporation, the Brix reading can describe the progress of a process. To ensure a reliable comparison, the product name, reference method and temperature conditions should be included for each measurement. Two samples with the same reading may not contain the same amount of sugar if their compositions differ. A switch between thin juice, thick juice and other mixtures is therefore a reason to check the respective classification. The classification as an apparent Brix value should be retained in the operational documentation.
If the laboratory and process results differ, first compare the actual samples analysed. Was the same batch analysed? Does the sampling time correspond to the process value used? Are the temperature references the same? Only then can a meaningful assessment be made as to whether the calibration needs to be adjusted. A change in the reading alone does not indicate either a faulty formulation or a sensor defect.
When making an enquiry, it is helpful to specify the product to be measured, the intended Brix range and any existing laboratory results. Please also indicate which other dissolved or suspended constituents may vary. This allows the desired parameter to be clearly distinguished from the determination of individual sugar types or total dry matter.
